Within the surroundings of the Mirage Hotel, you will dine in an exquisite atmosphere defined by French Impressionists, specifically Renoir, of course. Entrees include roasted squab, Maine lobster and braised short ribs with horseradish potatoes. Salads include asparagus arranged with grapefruit, topped with citrus vinaigrette. If you have room for dessert, there is the apple and caramel tarte with fromage blanc ice cream. Unusual choices such as Madeleines, small citrus-flavored cakes, or macaroons sandwiched with chocolate cream. The sommelier and staff will be happy to help you match wines with your dinner choices.
