Frybread is to Navajos what pasta is to Italians. It is the main menu item at this rough-hewn, but charming, Old Town eatery. Try the Navajo Taco ($6.50) which is frybread topped with ground beef, beans, tomatoes, onions, cheese, and red or green chile. A bowl of slow-cooked, spicy pinto beans costs $3.50, as does a taste-pleasing burrito filled with your choice of fillings and toppings. All of the entrees on Shi'Ma's (a Navajo nickname for a matriarch) menu are $6.50.
